HEALTHY GREEN ONION, CHICKEN, & BELL PEPPER SALAD

So with this recipe I actually took left over chicken I’d made for a salad the evening before and mixed it with green onions and red bell pepper I picked up from the local farmer’s market this morning! (Our farmer’s market is AWESOME! There’s so much delicious food and beautiful crafts!) The past week was full of really heavy food and both Kory and I were feeling it. We decided we needed to have a restart in our eating habits. This recipe is light and refreshing while still having a ton of flavor.

ingredients

  • 3-5 fresh green onions

  • 2 chicken breasts, sliced & diced

  • 1 red bell pepper

  • 2 tablespoons extra virgin olive oil

  • 2 teaspoons black pepper

  • 1 teaspoon cayenne pepper

  • 2 teaspoons pink Himalayan salt (regular salt is just fine, that’s just what I have on hand)

  • 2 teaspoons garlic powder

  • 2 teaspoon lime juice

  • 1 tablespoon water

directions

  1. In a medium pan, pour 1 teaspoon of extra virgin olive oil and turn burner to medium heat!!

  2. Season chicken with cayenne pepper, 1 teaspoon black pepper, 1 teaspoon salt, and garlic powder!

  3. Cook chicken thoroughly, occasionally stirring to get all sides!

  4. After about halfway in to cooking the chicken, pour in your lime juice and give it a good stir!

  5. While the chicken is on the stove, take out your cutting board and dice up the bell pepper and green onions!

  6. Set chicken aside, keep the temperature at medium, and put in the remaining olive oil in the pan!

  7. Throw your green onions and remaining salt & pepper into the pan and sauté! After 1 minute, add the water and cook until soft!

  8. In a small bowl mix the chicken, green onions, and pepper together and enjoy!
